Look at the "Good, Better, Best" document that compares the functionality of
Office 2K; Office XP and Office 2003 when used with the SharePoint 2003
products.
That is the functionality that you will have with those products with the
2007 SharePoint products.
For the additional functionality (in connection with office products) you
will need Office 2007.
There is no such patch or workaround - Microsoft's aim is to get you to
upgrade Office to match your SharePoint version.
(There is a workaround in the WSS FAQ for getting Edit in to work with
Office 2K but that's all)

I think we can safely assume that they will. (and probably quicker than the
document came out for SPS 2003/WSS and Office 2003.
